Happy Friday!! I have some delicious and refreshing summer treats to share today! I just know the sun is coming our way (ummm, eventually!) so it's nice to have a few simple go-to recipes on hand. This first drink is icy and watermelony and in-cred-ible on a hot day. It's so easy too which is key when you're entertaining in the summer, no fussing around, just freeze and blend and you're good to go!
Delicious Watermelon Slushy
4 cups of watermelon chopped into cubes
1 cup chilled vodka
2 tablespoons clover honey
Once you're chopped up your watermelon cubes freeze them in a ziplock bag for around an hour. Remove them from the freezer and pop them in your blender. Add vodka and honey and process until blended then pour into cocktail glasses.
You can chill the glasses beforehand to keep the watermelon nice and icy and garnish with a little watermelon rind, yum!
This next recipe is perfect if you have children, you will need to get out your popsicle molds before you get started or you can just make do with popsicle sticks and empty yoghurt pots like we used to do as kids...ahh, those were the days!
Dreamy Lemon Popsicles
2/3 cup of sugar
5 tablespoons fresh lemon juice
2 tablespoons grated lemon peel
1 pinch of salt
1 2/3 cup buttermilk
Whisk the sugar, lemon juice, lemon peel and salt until sugar dissolves. Whisk in the buttermilk. Divide mixture among popsicle molds. Cover and freeze until firm, atleast 4 hours or up to 5 days. Enjoy!
This last one is my absolute favourite cocktail using my favourite summer fruits...
Fab Frozen Strawberry and Lime Daiquiri
3 cups of hulled and quartered fresh strawberries (the sweeter the better!)
2 cups crushed ice (I do mine in the blender)
1/2 cup white rum
1/4 cup lime juice
3 tablespoons sugar
In a blender combine strawberries, ice, white rum, lime juice and sugar. Blend until smooth. Divide between four glasses and enjoy!
Ooh goodie, I just discovered I have a spare bottle of Bacardi sitting in my drinks cupboard so I will definitely be breaking out the Strawberry Daiquiri's on Saturday night! Woohoo, hurry up weekend, this first week back at work has been a bit hard to get used to I can tell you! Have a fab Friday!
