Quick and simple to make and great for a decadent Valentines Day dessert or for taking into the office lunch shout to impress the boss, these rich chocolatey beauties are bound to be a hit...
The Best Iced-Double-Chocolate-Fudge Brownie Ever

Brownie Ingredients:
250 grams chocolate chips
2 cups caster sugar
4 eggs, beaten
1 tsp vanilla essence
3/4 c flour
1/4 c self raising flour
1/2 c cocoa
extra 250 grams chocolate chips, chopped
Preheat oven to 160C. Line a 20 x 30cm sponge roll tin. Melt the first measure of chocolate. Beat sugar, eggs and vanilla in food processor or with a hand held mixer. Add melted chocolate, flours and cocoa. Stir in the extra chopped chocolate. Pour into prepared tin. Bake for 50 mins or until skewer inserted in centre comes out clean. Cool in the tin for approx 10 mins and turn onto airing tray. Ice once completely cool.
Chocolate Buttercream Icing Ingredients:
6 Tbs butter or butter substitute
1 c caster sugar
4 Tbs cocoa
2 Tbs milk
Cream the butter. Combine sugar and cocoa. Add sugar and cocoa mixture to butter. Add milk to to butter mixture. If mixture is too thick add another tablespoon of milk to get the right spreadable consistency. Smooth over the top of the brownie with a spatula. Cut into slices and serve - then try not to eat them all at once! ;)
These Iced Double Choc Fudge Brownies are extremely more-ish so consider yourself warned. My naughty husband keeps requesting them so my poor waistline hasn't much hope this year, I need to take the dogs walking more often I think to avoid the dreaded 'Brownie spare tyre'!!
Hmm, is it wrong that my last post featured a long and lean supermodel and I'm now discussing chocolatey desserts?! Oh well we can't all be supermodels, we can eat chocolate desserts whenever we like instead, which is way better in my books!! hehe
